Functional wheat flour enriched with starch «Amilon» 80 and 80/21

Amilon 80 and 80/21 is a wheat flour with starch content min. 80%. Wheat starch flour Amilon is produced in two forms: Amilon 80 (native) and Amilon 80/21 (modified by physico-mechanical method without use of any chemical agents).

Advantages of Amilon 80:

  • • Improves the structure of finished products;

  • • Has all the advantages of Amilon 80;
  • • Cold swelling effect;
  • • Serves as an alternative to chemically modified starches;
  • • Increases viscous-plastic properties of the finished profucts;
  • • High content of proteins and polysaccarides of good digestability; ;
  • • In hydrated state 1:(3:4,  forms dense structure («semolina porridge»);

Application:

  • • In some varieties of yeast bread and bakery products leads to a more rapid and full fermentation of yeast;
  • • Promotes increased porosity of finished products;
  • • Increases the output of finished products;
  • • Improves the organoleptic characteristics of the finished products;
  • • Reduces the fragility and crumbling of bakery and confectionery;
  • • Softens the texture of bakery and confectionery.
